Cabbage-Beans-Carrot Stir Fry


Ingredients

Cabbage - 1/2 cup
Beans - 1/2 cup
Carrot - 1/2 cup
Onion - 1 No.
Green chilli - 1 No.
Salt - To taste

Seasoning

Oil - 1 Tbsp
Mustard Seeds - 1/2 tsp
Urad Dal - 1 Tbsp
Curry leaves - Few


Method

  1. Finely chop the cabbage, carrot, beans and cook with enough water and a pinch of salt till soft, but not mushy. Drain the water and keep aside.
  2. In a pan add oil and the seasoning items as above.
  3. Add chopped onions, green chillies and saute for 3-4 minutes.
  4. Add the cooked vegetables and salt and stir for 2-3 minutes.
Remove and serve with rice or rotis!! I like to eat it just like that !!

Palak Stir Fry



Ingredients:

Tender Palak/ Spinach leaves – 2 cups
Onions – 1 No.
Ginger – ½” piece
Garlic pods – 3 Nos. (optional)
Oil – 1 tsp
Red chilli Powder – ¼ tsp
Salt – to taste

Seasoning:

Mustard Seeds – 1 tsp
Urad Dal – 1 tbsp
Dry Red Chillies – 1 No.

Method :

Clean the  leaves and chop them coarsely. In a microwave safe bowl add the leaves and little water cover and cook on Hi-Power for 3 minutes. Remove and completely drain the water.
Heat a pan, add oil and seasoning items.
Add the chopped onions, crushed ginger and garlic pods and sauté them till the onions become translucent.
Add the cooked spinach leaves, salt and red chilli powder stir for a few minutes.
Remove and serve hot with rice and ghee.

Carrot Halwa


Ingredients:

Carrot, peeled and grated - 2 cups
Milk - 2 cup
Sugar - 1 cup
Ghee - 2 tbsp + 2 tsp
Cardamom Powder - 1/4 tsp
Sliced Pistachio - 1 tsp
Whole Cashews - 1 tsp
 
Method : 
  1. In a pan add 1 tsp of ghee and roast the cashews till it turns to golden colour. Remove and keep aside.
  2. In the same pan add 1 tsp of ghee and fry the carrot for 3-4 minutes.
  3. Boil milk till it reduces to half the volume stirring occasionally so it doesn't get burnt.
  4. Add this milk to the carrot and allow to cook on medium flame till the milk evaporates.
  5. Add 2 tbsp of ghee and keep stirring well till the mixture starts leaving the sides and comes together.
  6. Remove and garnish with nuts.
