Cabbage-Beans-Carrot Stir Fry


Ingredients

Cabbage - 1/2 cup
Beans - 1/2 cup
Carrot - 1/2 cup
Onion - 1 No.
Green chilli - 1 No.
Salt - To taste

Seasoning

Oil - 1 Tbsp
Mustard Seeds - 1/2 tsp
Urad Dal - 1 Tbsp
Curry leaves - Few


Method

  1. Finely chop the cabbage, carrot, beans and cook with enough water and a pinch of salt till soft, but not mushy. Drain the water and keep aside.
  2. In a pan add oil and the seasoning items as above.
  3. Add chopped onions, green chillies and saute for 3-4 minutes.
  4. Add the cooked vegetables and salt and stir for 2-3 minutes.
Remove and serve with rice or rotis!! I like to eat it just like that !!
